New: Pascalisation is now also used for shellfish, like lobsters and oysters.
Thanks to the high pressure of pascalisation, it is now possible to easily to remove the whole scale of the lobster
easily by hand. So cooking the lobster is not needed anymore. This technique is much more friendly than cooking
the living lobsters and gives the complete meat with all the good authentic taste.

These pascalised lobsters and oysters are introduced in Germany under the brandname Der nackte Hummer and is
sold by Dieter Ehresmann Feinkost und Fleischwaren Vertrieb e.K.

Pascalised lobsters is a special technique and is recognizable at the official pascalisation-logo.
